This cut has quite a bit of delicious marbling, and is comprised of the shoulder, part of the foreleg, and sections of the first few ribs.
How Can I Cook It?
If you don’t use this cut for a pot roast, then you’re doing it wrong! Lamb shoulder is perfect for tossing into a slow cooker and forgetting about it until dinner time. Choose whatever liquids (maybe French onion soup?) and veggies you want and let it cook all day. This value cut makes for an easy weekday meal big enough for a family. However, if you are feeling more adventurous, lamb shoulder could also be prepared in the exact same way as pulled pork. We like to season ours heavily with a bbq rub and cook it in our smoker until probe tender. Let it rest to retain the juices, then pull it to shreds! Be sure to capture all the juices from cooking and mix it back in the with the meat. Serve with a sweet and hot bbq sauce.
