Lamb loin chops are a premium cut that comes from an area between the ribs and leg of the lamb known as the saddle, and is almost an entire muscle. It is one of the most tender and flavorful cuts of lamb, and comes with a small piece of bone attached (bone-in), which adds flavor and helps retain moisture during cooking.
How Can I Cook It?
Loin chops should be cooked hot and fast, so they are best grilled, seared over high heat, or broiled. We prefer ours cooked to medium rare and topped with a pan sauce of reduced red wine, brown mustard, and thyme.
