How Can I Cook It?
Leg of lamb can be cooked similar to a classic roast – leave the bone in, season the outside, and roast in the oven to temperature. We suggest finishing it medium – warm and pink on the inside – to maintain tenderness. Another option is the remove the bone and season inside and out with garlic, oregano, salt, pepper, and olive oil to create a Greek-style roast. Cook low and slow in an oven or on your smoker until fall-apart tender. It will take quite some time, as this is not a small cut, but the results are worth it, as every bit will explode with flavor.
